Oslo Meets Barcelona: SOIL × Aldea × Himkok

Some nights bring together places, people, and stories that have been a long time coming.

For one night in Barcelona, Himkok travelled south from Oslo to take over the bar at Aldea in El Born. Behind the bar was Simone, returning to a city he had called home for years before leaving eight years ago. It was his first time back since.

He brought Himkok with him. SOIL was part of the menu, and the Aldea team joined him behind the bar, bringing three different perspectives into the same room. It was a meeting of places, but also of people, techniques, and ways of thinking about drinks.

Himkok has built its reputation in Oslo through a distinctive approach to cocktail-making, combining Scandinavian influences, technical precision, and a strong connection to local ingredients. The bar ranked No. 24 in The World's 50 Best Bars 2026, continuing its presence among the world's leading cocktail destinations.

Aldea, tucked into the streets of El Born, brings its own perspective to the glass. Rooted in memories, travel, and inventive ingredient combinations, the bar was ranked No. 26 in Europe's 50 Best Bars 2026.

Different cities, different approaches, and a shared curiosity about what a drink can become.

For SOIL, the collaboration was an opportunity to bring its savoury spirits into that exchange. Rather than simply placing a bottle behind the bar, the idea was to see how the spirits could become part of another team's creative language, interpreted through the experience and perspective of the people working with them.

One night, three names

Collaborations like this are a reminder that hospitality moves through people as much as it does through places. A bar's identity travels with its team, its techniques, and the experiences they bring into every new room.
